quality of San Fran. steak house has gone down. if u want top grade steak, can try Ruth's Chris (Admiralty, TST E) or Madison (Sheraton Hotel). Outback ok. can also try 太平館.

我自己就食過 Louis's Steak House, W' Entrcoste係幾好, 又唔太貴, 以前tst海港城有間唔之係纜車定咩車都幾好, ruth's chris太貴lu, San Fran. steak house 都未試過, Jimmy's Kitchen d service唔太好, 無再去lu, 仲有無d咩好提議呀, 因為我bf好鍾意食牛扒, 但係金鳳, 花園, 扒王之類既就唔洗介紹比我喇............

靚牛肉唔腌的, 不過外層會有一層黑椒碎,既保存肉汁, 亦都脆, 不過而家好少餐廳會外面coat黑椒碎了...

W's Entrecote has very nice steak, but you don't much much choice other than beef

<br>Louis Steak House has been there for very long time, they have some other food to serve too but the price is a bit higher

<br>Outback steak is good too, and I love their bread especially :D~~~

<br>買一塊令扒, 由最easy到最難既都可以整,
<br>步驟亦唔係難, 如果鍾意食牛, 可以買件返屋企玩下..
<br>至於大利同九記....我覺得九記既野有d名過其實....不過佢既肥腩真係好好食, 至於大利....哈哈哈....我未食過

<br>可以講d野係知, 令扒通常分開兩次grill的, 第一次會猛火封面, 燒至一至三成熟, 放埋一邊, 到上main course 既時侯至grill到你想要既成數, 到入口既時侯, 肉汁, 肉質都比一次過grill的好...師父話呢d就你高級同cheap野既分別....

<br>到技巧一樣, 再比較的就係食材了, 所以一山還有一山高, 任你廚藝再高都會輸的, 因為食材是勝負的關鍵.....

<br>咁一塊扒點為之令呢?除左人地講咩grade 之外, 你亦可以留意下, 通常所謂入口即溶既扒都係好好好肥既......相對亦會較香, 肉汁亦豐富得多...唔好理果d咩grading, 用把口去感受, 天空突然開朗...呵呵

我覺得肉眼最好食, 因為夠香又夠軟滑
<br>西冷有口感, 不過無左肉眼果種香, 係我既次選
<br>最憎食牛柳, 除左威靈頓牛柳例外
<br>食牛肉, 而家大部份人都要黑椒汁, 燒汁, 而我就鍾意巴黎汁或者係賓尼士汁呢類舊式既汁, 如果係屋企, 我會用香草牛油汁, 或者乜都唔落, 配炒洋蔥食

<br>至於你所講果d貴價野, 我好少去食, 因為我自己本身做西廚, 對於食方面無咩要求, 所以唔會去果d貴夾唔飽既餐廳, 講真, 點好食, 未必岩口味, 仲有, 在我眼中呢d地方食野好唔抵, 所姒都少去

<br>用慢火溶左牛油之後, 加入rosemary煮一陣, 最後加入美極數滴....加入己煎好牛扒於pan中, 讓牛扒兩面索牛油, 上碟就成了, 有人會將牛油倒埋上碟, 不過我覺得唔一定要, 隨你喜歡好了

<br>鵝肝, 於 鵝肝上少許麵粉, 放入己熱pan中煎至有少許彈性就食得, 切勿加油煎, 因為鵝肝會出大量的油, 也不是太猛火煎, 因為都會焦的, 中火就可以了. (當煎蛋就可以了, 不過比蛋煎耐d

delilife, thanks for your tips of 煎鵝肝. I usually pan fried 鵝肝 with oil, eventually 出好多油 and it shrank (越煎越細, 越煎越心痛, haha...). should try your method later.
