Any... I like all kind of food, I enjoy eating and cooking but always concern about price / performance.

I agree 平野唔一定差, 貴野唔一定好. Tho some traditional food might hv disappeared, still there are new things coming up~ There are still tons of good food in HK la!

well, i think even if i hit into a not-so-good restaurant, its also an experience & know not to go there next time lor! & you have to have bad food so that you can appreciate those very nice one.
For Japanese, I highly recommend Doraya for good quality w good price. If its effortable, I love Hanagushi & Imasa.

this is too 偏激, i had quite a lot of good food everyday & enjoy them very much or~ Even normal canton hotpot like 小肥牛(not羊) or 利得 or 骨煲王 are so good & just around 100+ per head.

好味底食日本菜越來越少 <Fresh Sashimi of coz exp la... 太平你都唔敢食啦... << some of the fresh fish price dropped but it still quite expensive, e.g. salmon price dropped a lot now. 呢幾年貴左好多, e.g. 幾年前一條大針魚 $150, 八角都唔使$200, 現在唔敢諗. 有次食金目鯛竟然360四片!

well, I agree the price raised, but still got good places ga! I sometimes go Hanagushi in LKF since it near my office. For a lunch set its around 250, but it is with a bowl of high quality Udon + 10 pieces of sushi (including Uni, Toro, Hamachi... etc), & they are really fresh! (I dont eat Uni, but im still ok with those in Hanaguchi~)

i think the price raised for a reason ga, since its more poluted these days, so more diff to find fresh seafood eh, thats why they become more exp lor, esp 生蠔, really diff to find those really fresh!

Yes, I had been there many times. It's nice but better not to eat blue fin anymore cause overhunting, www.worldwildlife.org.
I will check out the other recommendation and really thz for that.

Yes, 250 depends on the quality, should be fat toro? Hanaguchi is very nice and I love it, Uni depends on where it come from, Hokkaido and part from toyko is very good. I had uni in Doraya but forget the source, it's big but bit sour and bitter which I will never have it again. Besides, sushi rice is a very important part but most of it is too bad that too soft, air not enough and not solid enough, and even sometimes the rice is warm that made me crazy.

you are such an expert, I never think if there are too much air in the rice or if the rice is solid enough, but i agree the rice is soooo important & I'm definitely not ok w bad cooked rice,
& the proportion of the vinegar is important too! & i like sushi more than sashimi!
Hanagushi is really nice place, if you work in Central, we can head there for lunch sometimes, tho so far to walk up all the stairs, haha~ I never have uni in Doraya before, since I don't eat uni usuaully.. & im too satisfied w the shrimp rice!!

Yeah the vinegar is definitely important, have you tried some with too much vineger? or some with the vinegar pasted in part of the rice, it affected the taste a lot. Besides, some sushi collapse when you wanna put it into your mouth, OMG! Also imagine the ratio between the fish and the rice!

haha, the one with too m uch vinegar is probably the sushi rice i cooked myself! haha~ & yes the rice collapse because the rice are too "wet" & not sticky enough & it wouldnt taste good either!

If you DIY 萬字米 is not a good choice in fact. Better use 田牧 or others. 先浸後煮 and don't just use tap water. It should be sticky enough just to 握 the rice need high skill and technique.

串燒is my favourite too that need another high technique! Different 素材 need different 熱力及燒法 that can't DIY too! The choice of the salt is dedicated and I remember 稻菊 have variety choice in salt but really expensive that is not affordable!

Yeah the oysters are not fresh. I had it many places but found that many "death" oysters, too bad! 唉~~ I love it but rarely have it now! I like OZ oysters (cheap and 重海水), complicated and metallic french, South Africa (good balance and mid price), and the pearl (small but strong), etc, wow~~~ really a lot!

When I compare it in Japan, it's really too expensive (double) that make me lost interest! 串燒 is for fun with friends drink and chat!!

can see you like eating so much in your words, haha! I am not a big fans of oyster, only if its super fresh. i like oyster stil w its shell. The imasa oyster is fresh, but i dun like it when its removed from its shell before serve!

Oh sharonna, there are lot of enjoyments and desires, can't fulfill all but better wisely utilize the limited resources, prioritize and maximize the effect.

剛剛看了Imasa的comments, 大部份都係講放題. 對放題興趣從來不大, 現在重質不重量. 魚要季節適合,新鮮,老板有選擇就好. 所以去開覺得OK就會反轉頭.
